What happens in the body during fermentation
During fermentation, tiny microorganisms such as lactic acid bacteria naturally transform the vegetables. They convert the carbohydrates they contain into lactic acid. This process not only preserves the vegetables, but also changes their structure. The bacterial activity creates a kind of gentle pre-digestion of the plant fibers. As a result, many people find fermented vegetables particularly easy to digest.
At the same time, fermentation produces various metabolic byproducts such as organic acids, vitamins, and other interesting compounds that can be a meaningful addition to a balanced diet. As with all foods, however, every body reacts differently. While many people tolerate sauerkraut very well and find it soothing, it can also cause discomfort for people with sensitive stomachs or certain intolerances. There is no miracle cure for everyone in nature.
The difference between raw and cooked

It is worth taking a closer look at how they are made, because beneficial lactic acid bacteria are sensitive to heat.
That is why the raw, unpasteurized products straight from the refrigerated section are especially popular. They contain large numbers of active live cultures that have a positive effect on the gut microbiome. But cooked sauerkraut still has its advantages. While the live lactic cultures are no longer active after heating, the valuable fiber, gut-friendly lactic acid, heat-stable vitamins, and other beneficial nutrients remain. So a warm lunch or dinner is still a tasty and nourishing part of the plate.
